Tom Haigh, Head of Green Coffee at Climpson & Sons, visited the Kilenso Mokinesa Cooperative in Ethiopia in December 2015 and was invited to a coffee ceremony.
This is a ritual in which coffee is roasted, ground and brewed before a group by local women. The coffee is taken alongside freshly made popcorn and is an observance of respect and hospitality throughout the country. The coffee itself is darkly roasted, syrupy and strong (sugar being a polite way around finishing the cup), but wholesome and refreshing.
After the ceremony was complete I showed them our preferred brewing method and made an Aeropress with a natural processed local coffee, much to the bemusement of the local people. It was possibly the most daunting brew I have made yet.
