The new toy in our cafe/roastery is the Clever Dripper. Whilst it wouldn’t receive any prizes for aesthetics (it reminds me of those 70s smoked glass tempered mugs you get in school canteens), we think of it as a ‘geeky’ cafetiere. Invented in Taiwan, it looks like a pour over but it combines the best features of a cafetiere and filter drip brewing, eliminating the drawbacks of each.
The ‘amazing shut off system’ means you put your coffee in, pour water over and steep for a desired amount of time; then when you are ready, you open the valve by placing the cone on a vessel to drain the coffee into. Hey Presto! The makers are so serious about this new method they have already patented it.
There are various techniques to using the Clever Dripper and therefore many variables – grind size, ratio of coffee to water, brew time, to bloom or not to bloom. Heck Matty from the Roastery even goes as far as using a v60 filter paper. So much fun to be had!
We like it because it is a full immersion coffee that is super clean and full bodied. It is cheaper than a cafetiere too! If you want to graduate from cafetiere to the latest fad of coffee then try one out.
