What is an 'Heirloom' variety? These varieties most resemble the Typica variety through there is no exact way of tracing their development. There are now over 1000 different heirloom varieties growing in the Wild Forests of Ethiopia and the first steps to separating them into lots are underway. These varietals are responsible for some of the most coveted cup profiles in the world.
Natural Processing Method: Cherries are dried with skin on, usually on patios; it can take 2-4 weeks depending. Then put into a huller to remove skin from parchment. This brings out the funk and makes for a very interesting and sweet body.
