Since 2003 the Fernandez family have been recognised for their commitment to sustainability with an ecologically friendly approach to their harvest and processing. They built Panamas first ecological coffee processing mill, the process uses small amounts of water and efficiently separates all the mucilage from the pulp. By using significantly less water than most mills, this is one of the ways in which Cafetalera contributes to environmental preservation.
This care and environmental sustainability is apparent throughout the farm, with immaculate picking, sorting and processing, leading to a transparent and approachable cup.
Hailing from the renowned Boquete region, this coffee has a clean caramel body with a sleek golden syrup finish. Destined to suit most brew method, we see ourselves drinking this in large mugs, looking out the window our cafe on a wet Wednesday in November. Begin brewing at 62g per litre and enjoy from there.
