The Fields: the adventurous single origin coffee.
The Fields is perhaps the cornerstone of our forward thinking approach at Climpson & Sons and our position as an innovator within the London coffee scene. It gives us the opportunity to showcase exciting and expressive advancements from farm to cup, be it through new hulling/processing/drying methods, variety genealogy, agronomical experimentation, or simply political and social change.
We are super excited to introduce La Bonanza from Colombia as our V20 The Fields.
Finca La Bonanza is located near the town of San Augustin, in the southern part of the fertile coffee growing region of Huila, Colombia. Since 2014, farmer Aurelio Alba has been producing delicious naturally processed coffees in collaboration with Colour of Nature, the exporting partners of our friends at Raw Material. Alba has had such a positive reaction to this that he's recently taken steps towards producing only natural coffees, something which is considered fairly rare in that part of the world.
The farm sits between 1700-1750 metres above sea level, and only the very ripest cherries are chosen. First they are put in a water tank to remove any which might not be up to standard, before being dried on raised beds inside a parabolic dryer. They're then stored inside grain pro bags to rest before being dehulled for dispatch.
Given the bright tropical flavours in this coffee, we're particularly excited to test out our different filter brewing options, while the delicate notes of cacao also make for a delicious and vibrant espresso.
